Minestrone Soup Night

For dinner I made this Italian soup and grain-free garlic bread. The bread recipe is not perfect yet, but I will let you know as soon as it is! (Still tasted amazing!)

ingredients
1 cup chopped carrots
1 1/2 cup chopped cabbage
2 celery ribs chopped
1 medium onion diced
1 tsp garlic
2 tsp oil
3 cups veggie broth
28 oz can diced tomatoes
1 cup spinach
1 cup water

directions
In a large pot sauté garlic, carrots, celery, cabbage, and onion in oil. Once onions are cooked through add the broth and tomatoes. Bring to a boil and simmer for about 20-30 minutes. Once everything is cooked add spinach and 1 cup of water + cook for 3-5 min. Add extra water if needed.

Cinnamon Crusted Pecans

ingredients
1 cup pecans
1/8 cup almond flour or coconut flour
1 egg white
1/4 cup coconut sugar
1 tbsp cinnamon

directions
Fluff the egg white with a hand mixer and fold in the flour, cinnamon and sugar. Add water if the mixture is dry (typical with coconut flour). You want it to be a moist dough. Mix in your pecans and bake at 300 for 45 minutes.

Raw Food Cobbler

Really quick and easy dessert!
Ripe pears are soft like cooked apples so I like to use those so there is no cooking required!

ingredients
3 1/2 cup diced ripe pears
1 tbsp cinnamon
1 tbsp coconut sugar
1/2 cup applesauce
Pecans + Raisins to your liking

directions
Mix all ingredients in a bowl and serve. Tastes really good heated too. If you want it warm heat up on the stove.
