Cauliflower Curry


I adapted the recipe from Dr. Andrew Weil’s Curried Cauliflower Soup


1 medium head of cauliflower
2/3 cup cashews
1 1/2 cups water
2 tsp oil of choice
1 onion
1 cup almond milk
1  1/2 tbsp curry
1 tsp tumeric
1 tsp cumin
1/2 tsp coconut sugar
1/2 tsp cinnamon
Salt to taste

Blend cashews in a blender, add 1 1/2 cup water, and blend again. In a large pot sauté the onions in oil. Add the blended cashew milk, almond milk, cauliflower florrets, curry, tumeric, sugar + cinnamon. Add water if needed to cover cauliflower. Bring to a boil and reduce to a simmer. When Cauliflower is soft (approx. 15 min) let cool. Add everything back to your blender and blend until smooth. Heat up again on the stove. Add more water if needed and add salt to taste.

Serve with green beans or chickpeas mixed in!
