Brown-Rice Crispy Treats


I have had a really interesting and messy week in the kitchen.

One success was these rice crispy treats. I know this is just one of many versions to come (they are that good).


3 cups brown rice puffs

1 spotted banana

1 ย 1/2 tbsp maca root powder

1/4 cup honey

1 tsp vanilla

1/2 cup almond butter

1 tbsp chia seeds


Add brown rice to a bowl and set aside. Combine banana, chia seeds, maca, and vanilla in a food processor and blend to a creamy consistency. In a pot or sauce pan cook almond butter and honey on medium until it is thin and hot. Add the banana mixture to your pot and stir. Slowly stir in mixture to your brown rice puffs. In an 8x8ish pan (all I had was a round one) lined with parchment paper scoop in the rice cakes. Press down and form to pan with a spoon and let it set in the freezer for about an hour.

Easy Optional Chocolate Topping

Mix 2 tbsp melted coconut oil, 2 tbsp cacao powder, and 1/2 tbsp maple syrup and spoon over rice crisps after they have been in the freezer for 1 hour. Set in freezer for ย another 5-10 minutes!
