Clam n’ Corn Chowder

Yields approx. 10 servings (I make a big batch and freeze some in mason jars) 

Ingredients

2 bags of frozen corn

2 onions–diced

2 cans of clams

2 cups celery

2 cups potatoes

1 cup shiitake mushrooms

2 cups hot water

2 cups almond milk

Directions

Sauté onions + potatoes in the bottom of a big pot in olive oil. Blend almond milk, hot water and 1 bag of corn in a blender (if it doesn’t all fit, blend 1 cup hot water + 2 cups almond milk and add 2nd cup hot water in next step). Pour blend over onions and potatoes and turn heat down to medium. Add second bag of corn, celery, clams, + mushrooms and cook until celery has softened to your liking.
