Fig Upside Down Cake




1 Single serving applesauce

1/4 + 1/4 cup coconut sugar

1 lb fresh figs sliced in half

3 eggs

3/4 cup almond milk

1 tsp vanilla

1/2 cup almond meal

1/2 cup coconut flour

1/2 tsp baking powder

1/2 tsp baking soda

2 tsp maple syrup


Preheat Oven to 350 degrees.

Coat a 9 inch circle pan with applesauce. Sprinkle 1/4 cup coconut sugar evenly into the bottom of your pan. Place sliced figs face down into pan. It should look something like this:



Next, mix 1/4 cup of coconut sugar, coconut flour, almond meal, baking soda, and baking powder in a bowl. Then add in the eggs, vanilla, almond milk, syrup and stir. Add a tiny more almond milk if it is needed.

Pour the cake batter over the figs and spread evenly. Bake for 40-50 minutes (until knife comes out clean). Let cool and serve warm…I am sure cold is good too but have not tried it yet!
