Potato n’ Kale Salad

IMG_0080This recipe is really easy and good. Some people do not like the bitterness raw kale has. In this recipe you cook the kale for under a minute and mix it up with avocado, balancing the bitterness really well. Kale haters will love this recipe 🙂

 

I made a second version of this recipe and really enjoyed it.

Version #1

Yields 2 Servings

Ingredients

1 large Potato
1 cup (packed tightly) chopped kale leaves
1/2 avocado
1/2 – 1 tbsp oil
salt + pepper

Directions

Sauté the potatoes in oil of your choice until tender. Add chopped kale leaves and stir until kale begins to wilt and turn bright green (about a minute). In a bowl mash 1/2 an avocado and add salt + pepper to taste. Mix the avocado with the potatoes and kale + enjoy!

Version #2 (Upgraded)

Ingredients

1 large Potato
2 cups (packed tightly) chopped kale leaves
1/2 avocado
1/2 – 1 tbsp olive oil
salt + pepper
1 red onion
1 cup mushrooms

Dice mushrooms, potatoes, and onions and mix with olive oil. Bake in a dish at 400 degrees for 25-35 minutes. Mix chopped kale into the potatoes when you take them out of the oven. Make a guacamole with the avocado, salt + pepper, and mix into the potatoes. Enjoy!
