Cauliflower Alfredo

I have been craving a creamy Alfredo sauce for a while now. I have heard of people making cashew cheese so I figured I could use that along with cauliflower to make a sauce, and it worked! 🙂

I have made this two ways:

#1 Alfredo sauce served over vegetables

#2 Alfredo sauce with chicken served over noodles


2  1/2 cups steamed cauliflower
2/3 cups cashews
2 tsp crushed garlic
1  1/2  cup almond milk
onion powder, salt, pepper, basil, and parsley (to taste)


Soak cashews for about 30-45 minutes. Once you have steamed the cauliflower (so a fork stabs it easy..I did not time it sorry!) drain the cashews. Next add the cauliflower, 1 cup of almond milk, cashews, and garlic to a blender. Pour into a large saucepan and cook on medium. Season to your taste and 1/2 a cup of almond milk to thin it out once it is hot. If you want to make chicken Alfredo, simply grill a chicken breast, slice it up and add to the sauce!
