Blueberry Loaf

Ingredients

2/3 cup frozen or fresh blueberries

1 mashed near-death banana

1  1/2 cup almond flour

1/2 tsp baking soda + 1/2 tsp baking powder

2 tbsp maple syrup

1/2 cup almond milk

1 tbsp melted coconut oil

2 eggs

Directions

Mix all ingredients in a bowl and bake in a loaf pan at 350 degrees for 30-40 minutes

  1. ahh i did something wrong! It came out too moist- almost watery. Do you pack in the almond flour? also can you just use egg whites instead of the whole egg? (the top part that actually baked tasted amazing though)

    • Oh no! No, I just scooped it out of the bag. You could try using just the egg whites (if so use 2), and if it was too moist you can add some more flour and bake it for a little longer too. The batter should be similar to thick cake batter.
