Chocolate Orange Birthday Cake :)


This year my birthday cake was the BEST I have ever had, not to mention the HEALTHIEST I have ever had. I was scared because I only made one attempt, and I wanted it to be perfect for my birthday and it was. I am dividing this recipe layer by layer: Starting with the cake, then the ganache, and lastly the ice cream on top.

Layer #1 Cake


1 cup coconut flour
6 eggs
1/2 cup maple syrup
1 tbsp coconut oil
2 tbsp applesauce
1/2 cup cacao powder
dash of vanilla
2 tbsp coconut sugar (or other granulated sugar)
1/4 cup almond milk
3 tsp baking powder


Mix all dry ingredients in a bowl. Separate four egg whites in a bowl, leaving two whole eggs and 4 yolks. Add the two eggs and four yolks along with everything else to the dry mixture. Whip the egg whites using a hand mixer and fold into the batter. Bake in a greased pan at 325 degrees for 20-30 minutes. Let it cool on the counter.

Layer #2 Ganache


1/2 cup cacao
1/4 cup melted coconut oil
1/2 avocado
1/3 cup maple syrup
1 tsp vanilla

Mix all ingredients together.

Layer #3 Ice Cream


4 bananas
1.5 tsp orange extract


You can use any vanilla almond or coconut ice cream to replace the yonanas in this layer. I made yonanas from the four bananas to make this layer. (read more here:

Make yonanas and mix with extract  (or ice cream of your choice mixed with extract) and spread in the same pan you baked the cake in lined with parchment paper. Spread the ganache on top of the yonanas (or ice cream of your choice) and place in freezer.

Final Step!

When ready to serve take the ice cream layer out of the freezer and set on cake and serve! I sprinkled cacao on top and swept it off with my hand to make it fancy. 🙂
