Apple Pancakes



1 medium apple

1 medium banana

1 cup almond milk

4 dates

1/2 cup yellow squash

5 eggs

1/2 cup almond meal

Blend all ingredients in a blender (perfect for pouring onto a pan). If your pancakes are not sticking together well add one more egg. Depending on size of eggs the recipe will vary from 5-6 eggs. Cook pancakes on one side until the batter fluffs up and is no longer “liquidy” –yes I am making that a word 🙂

Easy Optional Syrup:

On medium heat cook blueberries in about 1 tbsp of water for 5-10 minutes and then blend in a handheld blender.
