Shiitake Mushroom Pasta

Ingredients

1 28 oz can of diced tomatoes

1 cup of shiitake mushrooms

1 cup of broccoli florets

1 cup of spinach

1 cup of yellow squash

1/2 sweet onion

Season to your liking (I used salt, pepper, & basil)

Method

Sautee the mushrooms, broccoli, squash, and onions in a bit of oil. When the onions are cooked thoroughly add the can of diced tomatoes. Lastly add spinach and seasonings. Serve over quinoa or brown rice pasta!
