Raw Veggie Sushi


This was a really quick dinner!
Cook brown rice according to package directions

Shred up any veggies you have that sound good to you!

I used: zucchini, cucumber, celery & white carrots.

Roll up da roll! Would have been wayyy better if I had an avocado but I did not feel like going to the store. Avocados make everything better 🙂

To roll easy, put rice on rough side of nori. Take plastic wrap and lay a piece on the rice. Press plastic wrap to thin out rice. Flip over and lay your stuffings on the nori. Roll up the roll and form with plastic wrap. Slice sushi with plastic wrap still on it.
