I was surprised, this ended up tasting similar to a California Roll.

Cook brown rice and allow it to cool down. Cook tofu in a tiny bit of olive oil until it starts to golden. Once it is finished cooking pour some soy sauce in the pan and mix around. Season to your liking. I used salt, pepper, and garlic powder. Place nori with the rough side facing up. Cover the nori with rice except for 1 inch on each end (the short sides). Sprinkleseeds on rice. Take a sheet of plastic wrap and smush it onto rice. Flip the nori and stuff with slices carrots or cucumbers, tofu, and avocado. Roll it up!
