I have posted a lot of pumpkin recently…It is just so darn tasty and versatile. And when you open the box or can to make something, you have to use the rest!
I thought this was adorable for little ones and grown ups too! Can’t wait to get mine..
This is what happens when you are mindlessly cooking..
I cracked my egg into the shell trash..
Yields 8-10 large pancakes
*can substitute 1/2 cup of coconut flour for oat flour & 1/2 cup of almond meal for 1/2 cup of oats
1 cup almond meal
1/2 cup oats (for flour)
1/2 cup oats (as is)
1/4 cup pumpkin puree
2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 to 1 1/2 cups milk of choice
1 tbsp maple syrup
2 tbsp apple sauce
1 tbsp flax seeds
Process or blend 1 tbsp flax seeds and add in 1/2 cup of oats after flax s ground. Blend or process again.
In a large mixing bowl, mix all ingredients together. Use anywhere from 1 to 1 1/2 cups of milk for your desired consistency. I used almond milk. Cook on medium heat.
